we’ve got another crockpot meal to share!…this is one we’re still enjoying the benefits of (just last night we used some leftovers to make posole, which is another new cooking adventure i will share about later)!
we were having a craving for barbecue pork sandwiches…and pork shoulder happened to be on sale. score for us!
i used this recipe from the food network website as a guide for the pork, and followed the barbecue sauce recipe to make a wonderful sunday dinner. thanks emeril for the recipe!
3 lb pork shoulder
4 t. Emeril’s Creole seasoning
2 t. salt
1 t. cayenne
1/2 large onion, chopped
1/2 c. or more of water
combine the creole seasoning, salt and cayenne in a small bowl. pat and dry the pork shoulder. use the rub and coat the pork shoulder well.
spray the crockpot with non-stick cooking spray and line the bottom of the crockpot with the chopped onions. place the pork shoulder on top of the onions and add the water. turn the crockpot to low and cook for 7 to 8 hours. have your husband shred the meat (ha, he did shred the meat for me, but it was also while i was making the sauce). serve on a toasted bun with the homemade barbecue sauce.
i also made my potato salad…it was a quintessential american meal!
