look at what we made!
ah! yes! we’re so excited about the new addition to our kitchen. we received a late wedding gift card in early september, and i’m pretty sure matt knew right away what he wanted to spend it on. it took very little convincing for me to agree!
we’ve shared that we usually make a savory breakfast for saturday and sunday for sweet, but we even made a special exception to the rule this last weekend, and enjoyed using our new kitchen gadget! we even made it to costco to pick up real maple syrup. just the way waffles were meant to be!
i’m sharing this gluten-free pancake/waffle recipe, it is also from you won’t believe its gluten free. i am ever so thankful that we have had the chance to use some of its recipes!
1 1/2 c. cornstarch
1 T. baking powder
1/4 c. oil
1/4 t. salt
2 T. sugar
1 c. milk
1/4 t. xanthan gum
1/2 t. vanilla extract
combine all ingredients in a medium-size bowl. mix very well. the cornstarch and xanthan gum will want to clump together, but just keep mixing until everything is well incorporated. for waffles: measure out enough batter according to waffle maker directions, pour, and wait until ready.
our new waffle maker comes with a handy “ready” light that comes on when our waffles are finished cooking. its pretty great and makes it so easy! we’ve already used our new toy twice, and i’m sure there will be many other sundays (and even saturdays at times!) that we will get to enjoy some favorite waffles. slathered with some butter, peanut butter and syrup, they can’t be beat!
