and i’ve got another recipe!
can you believe i’ve never made home-made sugar cookies? my mom made them once a year near christmas and my brothers and i would all frost/decorate them. it was a tradition that we had for years and years. so, because of this, i never needed to learn nor did i ever have a recipe for it.
but, the past couple weeks i have been craving the sweetness of sugar cookies with a buttercream frosting. and i was totally in luck because i had a new recipe from a recent library cookbook i had borrowed (gluten-free!). great!
i voiced my craving to matt, who is always supportive of making cookies, and even in the midst of being terribly sick over the weekend, he and i mustered the energy to make them together.
they turned out delicious! we were so happy with them!
and the buttercream frosting, all we were missing was some food coloring and sprinkles…but that’s really just for aesthetics.
here’s the recipe i used, it is from you won’t believe it’s gluten-free!, you can find it on amazon here.
1/2 c. butter
1/2 c. sugar
1 1/2 T. milk
1 c. cornstarch
1/2 t. baking soda
1 T. plus 1 t. baking powder
1/4 t. salt
2 t. vanilla extract
1 1/4 t. xanthan gum
preheat the oven to 375 degrees. grease a cookie sheet.
cream the butter and sugar in a medium-size bowl. add the egg and mix until light. add the remaining ingredient and beat until thick. drop by rounded teaspoonfuls onto the prepared cookie sheet. using moistened fingertips, press the cookies out into 1/4-inch thickness. top with sugar. bake for 8 minutes, until lightly browned. the cookies will crisp after cooking.
frost using your favorite buttercream frosting. since we didn’t have a great deal of powdered sugar on hand, i didn’t use a specific recipe, but rather made the frosting according to taste using butter, powdered sugar, vanilla extract and milk.
the result are these fantastic cookies! sorry we have no pictures, i kept meaning to take them, and then whoosh(!) we had eaten the last of them!
