zucchini brownies?

another healthy dessert, and recipe no. 36 is a paleo brownie recipe from delighted momma using zucchini. this blogger has a bunch of recipes that are mostly free from flour and sugar. check her out if you’re feeling so inclined.

it is summer and zucchini have been on sale, can you tell? also, who can resist trying to put together a healthy dessert?

before we go any farther though, let me tell you a little about the paleo diet. first, let me say that we aren’t practicing this…but, quite a few recipes i’ve found for desserts and baked goods have also ended up being categorized as “paleo”. the paleolithic diet or caveman diet includes fish, meat, vegetables, fish, fruit, and nuts. it excludes grains, dairy, salt, refined sugar, and processed oils. basically, ask yourself “would a caveman eat this?” before you put it in your mouth.

1 c. almond butter (we used peanut butter, although technically legumes are excluded from the paleo diet)

1 1/2 c. grated zucchini

1/3 c. raw honey

1 egg

1 t. vanilla

1 t. baking soda

1 t. cinnamon

1/2 t. nutmeg

1 c. dark chocolate chips

preheat oven to 350 degrees. use non-stick cooking spray to coat a 9×9 square pan. combine all the the ingredients in a bowl and mix well. transfer to the square pan and bake for 35-45 minutes or until a toothpick comes out clean.

overall, this recipe was fairly decent. i decided though to add a few things to the recipe if/when we make it next time. the first thing, is to remove the skins from the zucchini. also, even though i shredded the zucchini using the box shredder, the pieces were still too big. so, make sure the pieces are smaller. also, i think adding a bit of cocoa powder would go a long way. since the only chocolate flavor comes from the chocolate chips, the cocoa powder could really help it to come together in the chocolate department. we will have to try it again, with those changes made and i think the outcome will be even better!
