blueberries have been on sale at the stores we go to the past couple weeks, so we’re taking full advantage of that and trying to eat them as much as possible and enjoying them in all their forms!
we found the recipe on allrecipes, here is the original.
preheat oven to 375 degrees F.
3 C. fresh blueberries
3 T. white sugar
1/2 C. orange juice
2/3 C. gf flour
1/4 t. baking powder
1 pinch salt
1/2 C. butter, softened
1/2 C. white sugar
1/2 t. vanilla extract
combine the first three ingredients (blueberries, 3 T. sugar, and orange juice) together in a bowl. per the suggestions from some of the comments, i also added an extra tablespoon of white sugar, 1/2 t. of cinnamon and 1/2 t. of nutmeg to the mixture. once combined, place ingredients in an 8 in square baking dish.
combine the next three ingredients (flour, baking powder, salt) in a small bowl and set aside. i added extra cinnamon, another 1/2 t. to this mixture…it seemed so bland without a couple little punches of flavor. also, per a suggestion from the comments, i made a larger batch of the “cobbler” part, upping the flour up to 1 cup and bumping every other measurement up as well.
cream together 1/2 C. sugar and butter. beat in egg and vanilla. gradually add in the flour mixture until combined.
drop batter over the blueberries in tablespoons, covering the blueberries as much as possible.
bake in oven for 35-40 minutes.
i also made a cinnamon sugar topping to go on this for some texture. it was a simple 1/4 C. white sugar with 1 T. of cinnamon sprinkled on top.
there you have it! another yummy try at making gf cobblers. i think they are quickly becoming our favorite summer desserts!
also, i have to admit, it seems like we are so inconsistent with our photos. we’re learning more about how to do this well, but forgot the finished product! i’ll let you imagine in your mind the wonderful blueberry bubbly-ness that comes up around the sides of the beautiful golden cobbler. yum! now you have to try it!
