so, i saw these cookies on pinterest, and am a huge fan of no-bake cookies. i was queen of making those things back in the day.
but, i really hadn’t made them, probably in close to a year? maybe at our friend scott’s birthday? or was that a christmas party? well, it was at his house.
anyways, i saw this recipe for vanilla no-bakes, and having always been a fan of chocolate peanut butter no-bakes, i thought, well, lets branch out.

2 c. sugar
2/3 c. milk
1 (3.4 oz.) box of vanilla pudding mix
3 1/2 c. quick oats
1/2 t. vanilla extract
combine the first three ingredients in a medium saucepan and bring to a boil. boil for two minutes, stirring often to ensure the mixture doesn’t burn. once the mixture has boiled, remove from heat and add remaining ingredients, stirring together well to incorporate. spoon cookies onto wax paper to form and cool. store in an airtight container.
i’m a big fan. these cookies are simply rich, yummy and vanilla-y. so good! one note–if there is just two of you, plan on eating these cookies for a week! it makes a lot! be sure to check out the blogger where i got the original recipe from, she also has other variations of no-bake that i’m going to have to try!
