even though we’ve been traveling (and i’m sure you’re tired of hearing about it), i was able to maintain my one recipe per week this last weekend.
thanks to pinterest again, i made ricotta stuffed chicken. it was delicious, but as you can see from the picture, this chicken was a little full-figured and as such we had to modify the cooking time.
also, by the time we had returned home from time in wisconsin, our spinach was bad, so we added some broccoli to the filling mixture as well for some texture and some greens. the recipe was really good, the chicken stayed really moist and was well seasoned with the fresh basil. overall, i think we would have it again, only we would try to have spinach on hand, and maybe not use as much ricotta.
